Impress your valentine with these deliciously simple cinnamon sugar plums…. only a few minutes to simmer down, served on a bed of silky smooth ricotta and a healthy sweet end to your meal. Enjoy.

Ingredients.

1 cup fresh ricotta, drained
 - 
1 lemon, zest
 - 
50g butter, unsalted
 - 
1 tablespoon cinnamon
 - 
1 teaspoon vanilla paste
 - 
1/4 teaspoon sea salt
 - 
1/4 cup coconut sugar
 - 
2 firm plums, halved and pitted
 - 
grated dark chocolate to garnish
 
Method.
1. In a small bowl mix ricotta and lemon zest together until smooth. Set aside.
2. In a medium frypan on low heat add butter, cinnamon, vanilla paste, sea salt, coconut sugar. Stir and simmer on low for 1 minute until sugar is dissolved.
3. Add plums, cut side down. Stir and coat with cinnamon sugar liquid on low for 2 – 3 minutes.
4. On two plates evenly spread the lemon ricotta, place two plum halves on top of the ricotta and drizzle liquid over the top. Grate with dark chocolate and serve immediately.
