Pancake Hack

These pre-made pancake portions are always ready to go for an afternoon or lunchbox treat. Make a basic pancake batter and freeze into mini silicone moulds with your favourite toppings like banana, dark chocolate or berries. This pancake mixture is so simple the kids can make it! Pop into the oven for 12 minutes and dust with icing sugar for a comforting afternoon treat. Enjoy

Prep time 10 minutes l Cook time 12 minutes l Makes 12 small pancakes

INGREDIENTS:
1 cup plain flour
1 teaspoon baking powder
1 cup plain milk
1 egg
Toppings: Banana, Dark Chocolate, Blueberries

METHOD:
1. Sift dry ingredients into a large bowl. Add wet ingredients and whisk together until smooth.
2. Place mixture into small 4cm silicone moulds. Add toppings such as banana, dark chocolate or blueberries and freeze overnight. Will last for 1 month in an airtight container.
3. Preheat the oven to 170ºC fan and line a greased baking tray with parchment paper. Place frozen pancake portions on the baking tray and bake for 12 minutes.
4. Serve warm as is or dust icing sugar on top. Enjoy.
