Cheat’s Lamington Pancake Cakes

Ingredients:
- 1 cup pancake premix, any preferred pancake premix. I used gluten free .
- 1 cup (250ml) coconut milk (or any milk)
- 50g unsalted butter, melted
- 1 egg
- ⅓ cup strawberry jam
- 3 tbsp desiccated coconut, extra for garnish
- 6 dark chocolate squares
- Whipped cream (canned), for garnish
- Dark chocolate, grated, for garnish
Method:
- Preheat the oven to 180ºC fan and grease a 6-hole muffin tray.
- In a bowl, whisk together pancake mix, coconut milk, melted butter, and egg until smooth.
- Spoon pancake mixture into each muffin hole, covering the base. Add a teaspoon of strawberry jam, 1 tsp coconut, and 1 dark chocolate square to each.
- Top with the remaining pancake mixture.
- Bake for 15 minutes, then cool for 15 minutes.
- Top with whipped cream, grated chocolate, and a sprinkle of coconut.
