Amanda Cordony teaches us the art of Longevity Noodles. Simple and bursting with flavour with shitake mushrooms, ginger, soy, honey and shallots topped with crispy duck breast.. Longevity noodles signify long life. The longer the noodle, the better so keep those noodles long Happy Lunar New Year.
Longevity Noodles with Duck Breast, Ginger, and Shitake Mushrooms
Prep time: 15 minutes | Cook time: 20 minutes | Serves: 2
Ingredients:
- 380g duck breast
- 150g rice noodles
- 100g shiitake mushrooms
- 100g shallots/scallions (cut into 5cm batons)
Sauce:
- 3cm ginger (minced)
- 2 garlic cloves (minced)
- ¼ cup soy sauce
- 1 tbsp sesame oil
- 1 tbsp fish sauce
- ¼ cup Chinese cooking wine
- 1 tbsp honey
Garnish:
- Sliced shallots/scallions
- Chilli flakes
Method:
- Score duck breast skin, season with salt and pepper, and place skin-side down in a cold pan on low-medium heat. Cook for 10 minutes, then flip and cook for 5 more minutes. Rest for 10 minutes.
- Cook noodles in boiling water as per package instructions.
- In the same pan, remove excess duck fat, then sauté mushrooms for 1 minute. Add shallots and half of the sauce, cover, and cook for 4 minutes.
- Drain noodles and add them to the pan with mushrooms and shallots. Stir in remaining sauce and simmer for 2 minutes.
- Slice the duck breast thinly. Serve noodles with duck on top, garnished with shallots and chilli flakes.
