Pea, Lemon and Pepper Linguine

With just six simple ingredients, this easy pasta dish combines fresh, vibrant flavours and wholesome ingredients for a delicious meal that comes together in no time.
The sweetness of garden peas, zesty lemon and subtle kick of black pepper coat the pasta creating the perfect dish for a weeknight meal or Sunday lunch. Enjoy.

Prep time 15 minutes l Cook time 20 minutes l Serves 4

 

INGREDIENTS:
– 200g linguine pasta, any preferred pasta
– 2 tablespoons (40ml) olive oil, extra to serve
– 1 brown onion, diced
– 2 cups frozen garden peas
– 1 large garlic clove, finely diced
– 1 (60ml) lemon, zest and juice. Extra zest to serve
– 2 teaspoons freshly cracked black pepper (only 1 teaspoon mentioned in the method)
– 1 teaspoon sea salt
– 5g fresh mint leaves, finely sliced
– 5g fresh parsley, finely sliced, extra to garnish

 

METHOD:
1. Bring a medium pot of salted water to boil.
2. Meanwhile, in a fry pan add olive oil and onion on low heat with a pinch of salt and 60ml of water. Simmer down for 5 minutes.
3. Add pasta and cook to al dente, normally 1-2 minutes before packet instructions time. 1 minute before the pasta is ready add 1 cup of peas. Drain pasta and peas, reserving 1 cup of hot pasta water.
4. Add to the frying pan the garlic, 1 cup frozen peas, lemon zest and juice, 1 teaspoon cracked pepper and 1 teaspoon of sea salt. Simmer for 2 minutes. Take off the heat.
5. Place pea mixture into a blender and blend until smooth. Place back into the same fry pan and add cooked pasta, pasta water and combine. Stir through mint and parsley.
6. Serve with extra cracked pepper, olive oil, lemon zest and parsley
